Beet Tips for Beet Tops! (from farmer Diego)
—> We would like to suggest cooking up the beautiful greens attached to your bunch of beets! In fact, beets and chard are members of the same species, beta vulgaris. Kind of like how Chihuahuas and Labradors are members of the same species Canis Lupus familiaris (dog).
—> Archaeological evidence suggests that wild chard originated in the Mediterranean lands, where the ancient Greeks and Romans would feast on the tender leaves. Eventually in Europe, chard varieties were selected that would produce tender sweet roots, giving us our modern beet.
